This traditional Steel Paring Knife is 25cm (10") long and is available in either left or right handed versions. Manufactured from AISI 1085 Carbon Steel. These knives have no handle, so some users wrap leather around the handle for comfort. The knives may need honing before use.

Was a bit dismayed that this knife has no handle - v sharp & good at its job. Thankfully someone was able to fashion a handle for me.

Because the knife comes with no handle, it does take some getting used to. I've had to wrap a leather strip around to stop it cutting my hands up when I'm using it. I might try and work out something more permanent later.
I'm also having trouble putting a really sharp edge on it, but that's more a fault with my sharpening technique than with the knife. I'm thinking I may have to have it professionally sharpened but will persevere with my diamond sharpeners and wet'n'dry for a bit first.
